How to Make Curried Pork in Coconut Sauce with Mango & Snow Peas
Step 1 – Cook the brown rice according to the directions on the packaging. This will take about 40-45 minutes.
Usual ratio rice:water = 1 part rice : 2 parts water.
Step 2 – Cut the pork in strips or cubes and season with salt, pepper and curry powder. If necessary, cut the larger snow peas in half.
Heat olive oil in skillet and saute pork and snow peas for 3-5 minutes.
Step 3 – Add coconut milk, minced ginger and red curry paste and bring to a simmer.
