Applecarré is an apple dessert that I’ve only seen in The Netherlands, but it’s name is a combination of Dutch and French. Carré means square, so this is a square apple dessert. It’s a simple recipe that includes pastry dough and a traditional apple, raisin, sugar and cinnamon filling.
What I like about it’s simplicity is the fact that you can make this dessert on the day you would like to serve it. Pastry dough desserts are the best on the day they are baked, so give it a try.

- Pastry dough – home-made of store-bought.
- Apple -your favorite apple dessert apple. Mine is Honeycrisp or Granny Smith.
- Raisins – you can also you dried apricots or cranberries (if you want to be more seasonal).
- Sugar
- Corn starch – Will catch some of the liquid.
- Cinnamon
- Egg – the ‘glue’ that keeps the dessert together, and it adds shine and a golden color.
How to Make Applecarrés for Two
Step 1 – Make the apple filling by mixing the apple (peeled and cut in small cubes), raisins, sugar, corn starch and cinnamon.
Step 2 – Cut a sheet of pastry dough in half and roll that half a little longer and wider.
Put the remaining half back in the freezer.
Step 3 – Fold the pastry dough in half and punch the seam at each edge. This way you know what the middle is.
Fold it back open and cut slits in one half of the pastry dough, leaving about 1/2-inch border and 1/2-inch between slits.
Step 4 – Place the apple mixture on the uncut half, again leaving about 1/2-inch border. Brush the border surrounding the apple filling with egg wash.
Step 5 – Fold the half with the slits over the apple filling. Press down on the border with your fingers and solidify that by using a fork. Brush the entire applecarré with egg wash.
Place the applecarré on a baking sheet, lined with parchment paper and transfer to a 400 degrees F. oven.
Step 6 – Bake the applecarré for 25-30 minutes or until pastry dough is brown and crispy.
Take applecarré out of the oven and allow to cool.
This apple dessert is best enjoyed on the day of baking. You can eat it warm or cooled or any temperature in between. Cut the applecarré in half and you have a 1-person portion.

Ingredients
- 1/2 sheet pastry dough
- 1/4 apple Honeycrisp or Granny Smith
- 1 tablespoon sugar
- 2 tablespoons raisins
- 1/2 tablespoon corn starch
- 1/2 teaspoon cinnamon
- 1/4 egg
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
- Peel the apple can cut into small cubes. (NOTE 1)

Notes
- You only need 1/4 apple for this recipe. Please don’t throw the rest away. You can eat it (most of us don’t eat enough fruit) in the spirit of ‘an apple a day, keeps the doctor away’ or you can use it in apple sauce or a salad.
- Place the other half of the pastry dough back in the freezer or use it to make savory snacks or another applecarré, so you have a dessert for 2 days.
