I know I say this often, but grilling fruit or vegetables is a wonderful technique. It brings out an intense flavor of a peach in this case. The caramelization of the sugars that are naturally in the fruit makes you realize how sweet a peach can be. The creamy, slightly tangy base of Mascarpone and yogurt are a contrasting flavor and texture to make the peaches shine. I topped this dessert with tarragon which adds a hint of anise to every bite.

How to Make Grilled Peaches on Mascarpone Cream

Step 1 – Make the Mascarpone cream by mixing Greek yogurt with honey and vanilla extract. Once that is well mixed, add the Mascarpone cheese. It will be a thick cream.

You can make it thinner by adding a little bit of milk, if you like. The grilled peaches are very juicy, so a thick cream adds more texture and pleasure than a thin cream.

Step 2 – Wash and dry the peaches. Cut them in half and cut the halves in 3-4 wedges. Brush both sides of the wedges with oil.

You can also decide to just cut the peaches in halves and grill them a such.

Step 3 – Heat the grill or a grill pan and place the peach slices on the grill for 4-5 minutes or until you see grill marks. A give-away is that the peaches start releasing their juices.

Flip the slices onto the other side and grill an additional 2-3 minutes.

Step 4 – Transfer the grilled peach slices to a platter for easier plating and to stop the cooking process.

Step 5 – Take the Mascarpone Cream out of the fridge and divide over 2 plates or wide bowls. Place the peach slices on top of that cream.

Garnish with tarragon for a finishing touch.

Serve immediately and ENJOY!

Ingredients

  • 2 peaches
  • 1 tablespoon olive oil

Mascarpone Cream

  • 1/4 cup Mascarpone cheese
  • 1/4 cup Greek yogurt
  • 1 tablespoon honey
  • 1/4 teaspoon vanilla extract
  • tarragon for garnish

Instructions

Notes

  1. If you find the Mascarpone cream too thick, you can make it thinner by adding a little bit of milk. Don’t make it too thin as the grilled peaches are very juicy, so a thick cream adds more texture and pleasure than a thin cream.
  2. You don’t have to cut the peach halves in slices. You can also grill peach halves. It may take a little longer to grill as you only grill them on one side. Please leave the skin on the peaches. It keeps the slices together, and the skin of a peach is not very thick, so easy to chew.
