Langues de Chat, Cat’s Tongues

Like so many other cookies, this simple French cookie is made from every day ingredients; butter, sugar and flour and egg. Langues de Chat or cat’s tongues in English, are sweet and thin as wafer cookies and can become very addictive.

These cookies pop up in other countries/languages as well, like they are called kattentongen in Dutch and I know I’ve seen them in Asia as well, often in desserts. Once you’ve mastered this recipe, and you will soon, you can come up with all kind of variations; dip one side in chocolate, with or without chopped nuts, dust with sugar or make a Milano cookie by spreading half of the cookies with a chocolate ganache and sandwich them with the other half.

  • Butter
  • Confectioner’s sugar
  • Salt
  • Egg
  • Vanilla Extract
  • Flour

Two notes I would like to make: 1. Make sure all ingredients are at room temperature and 2. You can use 2 egg whites instead of an entire egg. Unfortunately, it means you’ll end up with 2 egg yolks that you’ll need to find use for.

How to Make Langues de Chat

Step 1 – Mix soft butter, sugar and salt until smooth.

Step 2 – Add egg, vanilla extract and flour and mix again until smooth.

Step 3 – Transfer dough into a piping bag. Use a plain piping tip with an opening of about 1/4 inches. Pipe out strips on baking sheet lined with parchment paper of silicone mat. Pipe out cat’s tongues of about 3 inches long and 2 inches apart. They don’t have to be perfect, cat’s tongues are not all the same.

Step 4 – Bake the cat’s tongues in an oven of 350 degrees F for about 7-12 minutes. The cookies are done when they are deep brown around the edges, but still have a pale golden color in the middle.

As you can see, some of my strips were too close together and the cookies merged. Additionally, they are not all the same size, and that’s not something I worry about. The merged cookies are easy to separate. Best part, they taste the same as the ones that look perfect.

Allow the cookies to cool on a wire rack.

  • 50 grams butter soft
  • 50 grams powdered sugar
  • 1/4 teaspoon salt
  • 1 egg (NOTE 1)
  • 1 teaspoon vanilla extract
  • 50 grams all-purpose flour

Instructions

  • Mix soft butter, sugar and salt until smooth. (NOTE 2)
  • Add egg, vanilla extract and flour and mix again until smooth.
  • Transfer dough into a piping bag. Use a plain piping tip with an opening of about 1/4". Pipe out strips on baking sheet lined with parchment paper of silicone mat. Pipe out cat's tongues that are about 3" long and 2" apart. They don't have to be perfect; cat's tongues are not all the same.

  • Allow the cookies to cool on a wire rack.

Notes

  1. Instead of an entire egg, you can use 2 egg whites.
  2. You can mix the ingredients, no need for a mixer.
