Mango Cucumber Salad with Serrano Ham

Key Ingredients in This Recipe

  • Mango
  • Cucumber – I used the English cucumber as that is the more juicy cucumber.
  • Dressing: lime juice, olive oil, honey, salt & pepper
  • Parsley – cilantro would also be a nice herb to use.
  • Sesame seeds
  • Serrano ham – you can also use Prosciutto ham

How to Make Mango Cucumber Salad with Serrano Ham

Step 1 – Peel the mango with a vegetable peeler. This way you only cut the skin off and don’t cut off any mango meat. Use the same vegetable peeler and cut ribbons from the fruit.

Step 2 – Wash the cucumber and use that same vegetable peeler to cut ribbons. This way the size and thickness of the ribbons are similar to the mango.

Step 3 – Make a honey-lime-dressing by mixing olive oil, lime juice, honey, salt & pepper. Add this to the ribbons and mix, as well as finely chopped parsley.

Step 4 – Season with additional black pepper and sprinkle with sesame seeds.

Step 5 – Dress up with Serrano ham and serve and ENJOY!

  • 3 ounces serrano ham (NOTE 2) slices

Honey Lime Dressing

  • 1 tablespoon olive oil
  • 1/2 lime juice
  • 1/2 tablespoon honey
  • salt & pepper

Instructions
