  • Grapefruit – juice and bursts of vitamin C.
  • Red onion – or any other type of onion.
  • Goat cheese – feta would be a great alternative.
  • Sprouts

How to Make Quinoa Chickpea Salad with Grapefruit

Step 1 – Heat olive oil in a pan and cook the red onion. Add water for the quinoa and cook until done. Check out the How To page.

Step 2 – While the quinoa is cooking, start prepping the vegetables; drain the chickpeas, chop the parsley and slice the avocado and grapefruit.

Step 3 – Once the quinoa is cooled a little and lovely and fluffy, add the chickpeas and mix.

Step 4 – Crumble the goat cheese and add to the salad.

Step 5 – Place the slices of avocado and grapefruit on top of the goat cheese.

Step 6 – Make a dressing from orange juice, lime juice, grapefruit juice, olive oil and salt & pepper and pour over the salad.

Step 7 – Garnish the salad with sprouts and parsley and enjoy!

Ingredients

For the quinoa

  • 1/2 cup quinoa
  • 1/4 cup red onion finely chopped
  • 1 teaspoon turmeric
  • salt

For the salad

  • 1 grapefruit peeled and segmented
  • 1 avocado sliced
  • 1/2 can chickpeas drained
  • 1/4 red onion chopped
  • 2 ounces goat cheese crumbled
  • sprouts optional
  • parsley fine chopped

For the dressing

  • 1/2 orange juice only
  • 1/2 lime juice only
  • 2 tablespoons olive oil
  • salt & pepper
  • grapefruit juice drippings

Instructions

  • Place the slices of avocado and grapefruit on top of the goat cheese.
  • Make the dressing from orange juice, lime juice, grapefruit juice, olive oil and salt & pepper and pour it over the salad.
  • Garnish the salad with sprouts and parsley and enjoy!
