This Thin French Apple Tart is easy to make, and a way to express your pie decorating creativity. It’s a simple recipe with thin apple slices brushed with apricot jam.

This classic French dessert recipe is simplicity at its best and it won’t take hours to make. Made with pie dough instead of pastry dough and crispy apples. Ideal to serve at the end of a cozy date night or a small gathering. Made with pie dough instead of pastry dough.

  • Pie dough – I used a store-bought dough, but of course you can make one yourself as well.
  • Apples – I mostly use Granny Smith when I bake with apples as they stay firm and they are tart, something I like as well. In this recipe I used a combination of Granny Smith and Honey Crisp; a slightly sweet apple that stays firm as well.
  • Walnuts – you can also use almonds or pecans
  • Sugar
  • Cinnamon
  • Apricot preserves

How to Make Thin French Apple Tart for Two

Step 1 – Place the dough in a 6-inch pie form. You will have a little bit of dough left-over, which you can just sprinkle with some cheese or sugar and you’ll have a few cookies for later.

Step 2 – Grind the walnuts fine. Do this with a food processor, a knife or with a rolling pin.

Step 3 – Spread the walnuts over the bottom of the pie.

Step 4 – Sprinkle a mixture of sugar and cinnamon over the layer of ground walnuts.

Step 5 – Peel the apples and slice them thinly. For this thin tart, I prefer to peel the apples, but keeping the peel on will work as well. Place the slices in the pie form. You can do this in rows, in circles, each slice slightly overlapping the previous or create a pattern of your own.

Step 6 – Sprinkle the apple slices with sugar and place the tart in a preheated oven of 425 degrees F. for about 20-30 minutes.

Step 7 – Warm apricot preserves or jelly in a microwave and brush it over the apples slices immediately after the pie comes out of the oven.

Allow the Thin French Apple Tart to cool completely and ENJOY!

That wasn’t so difficult now, was it? Cut the tart in quarters and enjoy a piece with your partner. Place the remaining two in the fridge for a day or two, when you keep the pie in the fridge much longer, the dough will lose its crustiness.

Notes

  2. For this delicate thin pie, I prefer to peel the apples, but if you like to keep the peel on for color and fiber that will work as well.
