Cherry muffins make for an absolutely delightful breakfast choice. The soft muffin texture and the fruity tang of cherries, with a sweetness that isn’t overwhelming, make cherry muffins just right for pairing with a cup of coffee or tea.
Make the streusel by mixing melted butter, flour, sugar and cinnamon until you have a crumbly mixture. Place in the fridge until you need it.
Muffin Batter
Whisk melted butter, sugar, egg, yogurt and vanilla extract until well combined.
Mixture flour, baking powder and salt and add this to the butter-sugar mix and whisk until combined. Place in the fridge.
Heat the oven to 375 degrees F.
Wash, dry, pit and chop the cherries. Fold the cherries into the batter.
Scoop the muffin batter into the muffin pan, lined with 6 muffin liners.
Sprinkle the streusel over the muffins and place the muffin pan in the oven.
Bake the cherry muffins for 25-30 minutes. A toothpick inserted in the center should come out dry. Cool the muffins in the pan for about 5 minutes and then cool the further on a rack.
