When you’re looking for a cake that’s both simple to make and bursting with the natural sweetness of fresh apples, you found it; a Double Apple Cake. A combination of tender slices of fresh apples and homemade applesauce – a lot of apple goodness in every bite.
1wholeapplecut in very thin slices (by hand or mandolin)
1/2cupapplesauce (NOTE 1)
2tablespoonssugar
Dry ingredients
1.5 cupsall-purpose flour
1.5 teaspoonsbaking powder
1cupgranulated sugar
1/2teaspoon salt
Wet ingredients
2wholeeggs
1/2cupvegetable oil
1/4cup orange juice
1/2teaspoonvanilla extract
1tablespoonbrown sugaroptional
Instructions
Preheat the oven to 350 degrees F. and line a 9 x 5-inch cake form with parchment paper.
Make 3 separate mixes:1. Mix all dry ingredients: flour, baking powder, salt and granulated sugar.2. Mix all wet ingredients: eggs, vegetable oil, orange juice and vanilla extract.3. Mix apple slices, applesauce, cinnamon and sugar.
Add the dry ingredients to the wet ingredients and combine.
Pour half of the batter in the bottom of the cake form and top that with half of the apple mixture, nicely.
Pour the rest of the batter in the cake form and then the remainder of the apple mixture.
Cover with brown sugar. This is an optional step.
Place the cake in the oven and bake for about 1 hour, or until a toothpick comes out dry.
Allow the cake to cool a little, before slicing it.

This recipe is made with homemade applesauce. A quick and easy recipe can be found here. You can also use store-bought applesauce if you prefer.
