Wash and peel the carrots if needed. Cut them in large and long matches and cook them for 3-4 minutes in water with a pinch of salt. The carrots should still have a bit to them. If you cook them longer they will fall apart, when you try to wrap them.
Cut the slices of Prosciutto ham in half, lengthwise or fold them double.
Double stack or fold the prosciutto halves, sprinkle with a little bit of parsley and place a bundle of carrot sticks on the ham, perpendicularly. Roll the ham around the carrot sticks.
Heat butter in a skillet and cook the Prosciutto wrapped carrots in about 5 minutes until the ham is crispy.
