Pumpkin Mashed Potatoes

Thanksgiving and mashed potatoes are meant to be together. Depending on the color combinations on your Thanksgiving plate, you may want to add this colorful and flavorful Pumpkin Mashed Potatoes.

Ingredients

potatoes
russet or yukon gold
1/4
cup
milk
1.5
tablespoons
pumpkin
1.5
tablespoons
Mascarpone Cheese
salt and pepper
nutmeg
Instructions
Peel the potato and cut it in cubes.
Transfer to a pan with water and salt and cook until soft (not mushy).
Mash the potato with a mixer, potato masher or whatever tool you are comfortable with.
Add the milk and mix, creating a mash. Make sure it is not too thin.
Add pumpkin and Mascarpone cheese and mix again.
Taste and add salt, pepper and nutmeg.
