Sweet potatoes have an incredible flavor on their own, so with a few ingredients and minimal effort, you can easily create a fluffy bowl of potato deliciousness.
Peel and cube the sweet potatoes and transfer the cubes to a saucepan with water and salt. Bring the mixture to a boil, turn down the heat and simmer for about 10 minutes or until fork tender.
Drain the sweet potatoes and return to the saucepan. Mash them to a consistency you prefer. This can be until perfectly smooth or a mixture that still has some potato pieces left.
Add sliced green onions, chopped parsley and minced garlic and stir. (NOTE 1)
Add milk until you reach the desired consistency. (NOTE 2)
Add salt & pepper to taste.
Transfer Savory Mashed Sweet Potatoes to a bowl, create a swirl and place a dollop of butter (optional) on top. Sprinkle with parsley and serve.

Notes
Use garlic paste instead of a garlic clove if that's more convenient to you.
Keep some parsley behind for garnish.
When using sour cream or yogurt, the flavor will have a tiny tangy hint, that you won't get from the milk.
